About cotto e crudo

Choosing the food we buy and eat is a powerful means of taking responsibility for ourselves and the world we live in. It is important that such choices are informed and conscious. ‘Cotto e crudo’ is focused on green, sustainable,  healing, cruelty-free cooking and the development of recipes that are delicious, healthy, nutritious, animal-friendly and gentle on the environment. This blog gives people some ideas and resources to introduce more plant-based food into their diets, to optimize their health, eating habits, lifestyle, to prevent disease and lower the negative impact that modern, contemporary (food) production and consumerism have had on nature, the planet and its inhabitants.

Some basic tips for healthier, green eating

-choose wholesome, unprocessed, GMO-free, organic foods

-include fresh, seasonal produce as a major part of your meals

-if you are an omnivore (meat eater), avoid factory farmed meat and poultry and reduce, or avoid, fish known to come from farms and polluted waters

-if you are a lacto-ovo vegetarian, choose organic dairy products and eggs from sustainable family farmers

-avoid refined foods and junk food in general

-avoid hydrogenated fats/oils and choose cold-pressed vegetable oils instead

-reduce, or avoid, salt (when you do use it, make whole sea salt, or Himalayan salt, your preference)

-avoid refined sugar, replacing it with agave syrup, maple syrup, rice -or barley- malt syrup and whole, unrefined cane sugar such as Muscovado

-shop at local farmers’ markets

-eat fermented foods such as miso, pickled vegetables, sauerkraut to build a beneficial intestinal flora
