Spiced porridge with apple and pomegranate

Ingredients
150 g rolled oats
300 ml filtered water
almond milk, unsweetened and unflavoured, to taste
a few pinches of mace powder
a few pinches of cinnamon powder
concentrated apple juice, to taste
1-2 handfuls of pomegranate kernels
half a red apple, cleaned and diced
1-2 handfuls of raisins
Makes 2 servings.

Wholemeal cookies

Ingredients
150 g whole oatmeal flour
50 g semi-whole wheat flour
50 g whole kamut flour
a pinch of whole sea salt
half a teaspoon baking soda
80 ml almond milk, plain (unflavoured) and unsweetened
90 ml extra virgin olive oil
150 g rice malt syrup
60 g unrefined cane sugar such as muscovado

Makes 18-20 cookies.

Leek soup with crumbled chestnuts

This soup provides the perfect meal: it’s tasty, slightly sweet, warm, soothing, and smooth. It’s easy to make, leaves you fulfilled, and requires very few ingredients. Here I use oat milk for its mild, sweet taste, and add some dried chestnuts to make this dish a little bit different.
