<p style="text-align: justify;">Put the sliced seitan in a bowl. In another bowl, mix the lemon juice, orange juice, olive oil,  chopped fresh coriander, salt, garlic, fresh ginger and powdered ginger. Pour the vinaigrette over the seitan, transfer into the fridge and  let marinate for 18-20 hours, mixing now and then. Serve cold or at room temperature with vegetables such as zucchini and tomatoes.</p>

Add the lemon juice and orange juice, vanilla extract, molasses and ginger juice and stir. Stir in the mint and cloves and refrigerate for 2-3 hours before serving.</p>

<p style="text-align: justify;">Steam the potatoes until cooked but still al dente. Transfer them onto a plate and let cool. When the potatoes are completely cold, divide them into induvidual serving plates. Coarsely chop the olives (or slice them into two halves), and add them to the potatoes. Add some sango sprouts, season with salt, drizzle with some olive oil, lemon juice and vinegar then sprinkle with the nori flakes and pepper and serve.</p>

Stir in the rice malt syrup and cook for a couple of minutes then add the agar agar, and keep cooking for about 5 minutes, while stirring continuously. Remove the saucepan from the heat and pour the hot berry tea mixture into a baking pan (use a steel or ceramic oven pan), then set aside and allow to cool, first at room temperature then in the ridge (at least 2 to 3 hours). When it is cold and completely firm, you can cut the jelly into squares and serve.</p>

<p style="text-align: justify;">In a salad bowl combine the celeriac, apple and lemon slices and drizzle with some lemon juice. In a separate, smaller bowl, combine the olive oil, salt, rice malt syrup, mustard and apple vinegar until completely mixed. Transfer the vegetables into individual serving plates then pour the dressing over them just before serving.</p>

<p style="text-align: justify;">Wash well the mushrooms under running water then drain them on a paper towel. Pull the stems from the mushrooms, place the caps on a dish and drizzle with half of the lemon juice. Transfer the stems into the bowl of a mixer. Add the remaining lemon juice, zucchini, garlic, flax seeds, basil and blend for a couple of minutes (medium to high).  Add the hazelnuts, olive oil, pepper and salt and blend again for one more minute.<br />
Before serving, fill each mushroom cap with 2-3 teapoons of pesto and arrange stuffed mushrooms on a serving plate. Garnish with some chopped hazelnuts, olive oil and pepper.</p>

<p>200 g green beans<br />
2 medium-large potatoes, peeled and sliced<br />
a large handful of fresh rocket, cleaned<br />
a handful of capers, soaked in cold filtered water for about 15 minutes then rinsed</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Cook the green beans al dente in salted, filtered water. Steam the potato slices. Drain the beans, then  transfer them into a salad bowl. Add the steamed potato slices and let cool.</p>
<p style="text-align: justify;">To make the pesto, combine the basil, zucchini, pine nuts, olive oil, water, salt and lemon juice in the bowl of a food processor. Process until rather creamy.</p>
<p style="text-align: justify;">Once the beans and potatoes are cold, add the rocket, the capers and the pesto and toss gently. Add some extra olive oil, if needed. Garnish with some basil leaves and pine nuts and serve.</p>

<p style="text-align: justify;">Pour the almond milk  into a heavy saucepan and bring to a simmer. Add  the agar agar, stirring constantly to avoid lumps (you can even mix the agar agar with an equal amount of cold almond milk or filtered water). Stir until dissolved. Simmer for 3 to 4 minutes, making sure the milk does not stick to the bottom of the  saucepan. Remove the saucepan from the heat and pour the mixture into a low ceramic casserole dish. Set aside and allow to cool for  at least 2 to 3 hours, or until completely firm. When it&#8217;s time to prepare the custard, break the gelatin into pieces and put it in the bowl of a mixer. Add the rice malt syrup and the almond butter and process until very smooth. Pour the custard into ramekins or glasses and refrigerate for at least 2 hours, or until serving time.</p>
<p style="text-align: justify;">In the meantime, clean the berries and combine them in a bowl, add the rice malt syrup, vanilla and lemon juice and toss. Refrigerate until serving time.</p>
<p style="text-align: justify;">Serve the almond custard cold, topped with the berries and lemon zest.</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Cook the long grain rice in plenty of boiling, slightly salted water. Cook the black venere rice the same way in a separate pan. Make sure the rice is still al dente when you drain it. Rinse it under cold running water and transfer it into a salad bowl. Add the lemon juice and some sesame oil and refrigerate until it&#8217;s completely cold. To assemble your rice salad, take out the rice from the fridge and add all the vegetables, the ginger, some more sesame oil, the  salt, the nori flakes and toss. Top with the chives and serve cool.</p>

Cook the fruit over medium heat for 10-15 minutes, then turn the heat down to low and keep cooking for another 15 minutes, stirring occasionally. Add the agar gar, stir well and simmer for 5-10 minutes, or until the fruit has thickened, stirring constantly to keep from sticking to the pan. Turn the heat off, pour the strawberry mixture into individual jars. Let cool before covering each jar with a tight-fitting lid. Store in the fridge, where it will keep for up to 10 days, 2 weeks.</p>

2 handfuls of shelled walnuts, coarsely chopped</p>

<p style="text-align: justify;">Put all the dressing ingredients in a jar, secure with a lid and shake until perfectly combined. Set aside.</p>
<p style="text-align: justify;">Break the kale leaves into slightly larger than bite-size pieces and put them into a large salad bowl, add the pear slices and the walnuts and toss. Serve with the dressing on the side, or drizzle lightly and serve.</p>

<p style="text-align: justify;">Start by pounding the garlic in a mortar and pestle, then add the salt, pepper, chili, oil, lemon, thyme and oregano. Using the pestle in a circular motion, coarsely grind the mixture then set aside. Break the seitan into small, bite-sized chunks. Place a heavy bottomed pan on the heat and wait until it&#8217;s hot. Dip the seitan chunks in the marinade making sure they&#8217;re completely covered and cook until they&#8217;re evenly golden brown. Transfer the seitan onto a serving plate, pour the left-over marinade (if any) over, and serve. You can also enjoy the seitan as finger food, using toothpicks or skewer sticks.</p>

<p><strong>Ingredients </strong></p>
<p>half a cup quinoa, rinsed under running water<br />
filtered water and a pinch of whole sea salt (to cook the quinoa)<br />
1 medium zucchini, trimmed, peeled and sliced<br />
half a head of Romanesco broccoli, washed, broken into bite-sized florets and cooked in salted boiling water for 3-5 minutes (they should stay crunchy)<br />
a large handful of green olives, stones removed and finely chopped<br />
1 garlic clove, peeled and minced<br />
1 small fresh red chilli, seeds removed and chopped<br />
2 handfuls of fresh parsley leaves, chopped<br />
a handful of fresh basil leaves, chopped<br />
extra virgin olive oil, to taste<br />
whole sea salt, just enough to taste<br />
1 teaspoon poppy seeds<br />
zest of 1 lemon, grated</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Place the quinoa in a heavy bottomed saucepan and pour water over it (2 parts water,1 part quinoa). Bring to a boil, add a pinch of salt, cover then turn down the heat to a low simmer. Let the quinoa cook for 15-20 minutes, until amost transparent and a bit fluffy. Remove from the heat then transfer into a large salad bowl or a serving tray.<br />
Let cool a bit then add the zucchini, the broccoli, the olives, the garlic, the chilli, the parsley and the basil. Season with the olive oil and salt, mix thouroughly then garnish with the poppy seeds end the lemon zest. You can serve it either warm or cool.</p>
