Stir in the cumin and coriander, finish with the chopped parsley, toss and serve slightly cold or at room temperature.</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">In a bowl or jar mix the lemon juice, shoyu, apple vinegar, ginger powder and ginger juice, sesame oil and toasted sesame oil and maple syrup. Place the tofu cubes in a bowl, pour the marinade over, cover and refrigerate for at least 6 hours, tossing occasionally. The longer the marinade time, the tastier the tofu. In a glass jar, combine the ginger, garlic, apple vinegar, lemon juice, rice malt syrup and salt. Cut the peppers into strips and place them in the jar. Secure with the lid and refrigerate for at least 5-6 hours. Remove the peppers from the fridge around half an hour before serving. Once the tofu has marinated, heat some marinade in a wok or large heavy-bottomed frying pan and cook the tofu over medium heat until golden on all sides. Serve the tofu and the peppers with some of the left-over tofu marinade and the sesame seeds.</p>
<p style="text-align: justify;"><strong>Thoughts, tips, ideas</strong></p>
<p style="text-align: justify;">The pepper marinade can be reused at least once to marinate other peppers or different vegetables such as cucumbers, carrots, radishes, zucchini -which will all pick up a peppery flavour.</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Cook the chickpeas until al dente. Rinse them under cold running water, drain well and let cool. In the meantime, combine the soy yogurt, olive oil, curry powder, turmeric and salt in a bowl and whisk until smooth. When the chickpeas are completely cold, transfer them into a sald bowl, add the cucumber, green pepper, parsley and garlic and toss. Stir in the spiced soy yogurt, add the cumin and white pepper, toss again and refrigerate. This salad is best served very cold.</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Wash well the lentils and cook them in filtered, unsalted water until al dente. Drain the lentils, rinse them under cold, running water then drain them and transfer them into a salad bowl. Add the lemon juice and refrigerate until completely cold. Add the cherry tomatoes, sun dried tomatoes, mint, olive oil, salt and toss. Finish with the avocado and some extra mint leaves and serve.</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Preheat the oven at 180° C. Cook the lentils in the water until they&#8217;re and tender (they should absorb all the water). Place them into the bowl of a food processor and process until creamy and smooth. Transfer the lentil mixture into a bowl, add the minced seitan sausage and plain seitan, garlic and olive oil and mix. Stir in the flax seeds, breadcrumbs, salt, thyme leaves, oregano, pepper and paprika and mix again. Take some mixture and shape into balls until there&#8217;s none left. Arrange balls on a lightly oiled baking pan and bake for about 30 minutes, until golden on all sides. remove from the oven and set aside.<br />
To prepare the sauce, sauté the garlic in the olive oil in a large pan or wok. Add the cinnamon, paprika, pepper, chili, thyme and oregano and keep cooking, while stirring, for less than 1 minute. Stir in the tomato purée, season with the salt, then add the water and peas. Mix, turn the heat to low and cook for about 15 minutes and add the raisins. Keep cooking for another 15 minutes or until the peas are tender but the sauce not too thick. Stir in the almonds, transfer the seitan balls into the pan and make sure they&#8217;re all covered with the sauce. Remove from the heat, cover with a lid and set aside for about 15-20 minutes before serving.</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Squeeze the grapefruit juice into a clean jar and add twice the amount of olive oil. Add the sesame oil, rice malt syrup and season with salt and pepper, secure with the lid and shake to emulsify.<br />
In a salad bowl, combine rocket, dulse and lentil sprouts and toss. Drizzle over some vinaigrette, sprinkle some sesame seeds and serve.</p>

<p style="text-align: justify;">Cook the chickpeas in unsalted water (add the salt to the pot when the chickpeas are almost completely cooked as salt hardens the outer layer). Cook the quinoa al dente in lightly salted water in a separate pot. Drain well and let cool. When the chickpeas are cooked, rinse them under cold, running water, drain well and let cool. Once the quinoa and chickpeas are cold, transfer them into a sald bowl the stir in the red and yellow pepper, tomatoes, carrot, olives, parsley, basil and toss. Season with the olive oil and salt, mix well and serve.</p>

<p><strong>Directions</strong></p>
<p style="text-align: justify;">Cook the green beans al dente in salted, filtered water. Steam the potato slices. Drain the beans, then  transfer them into a salad bowl. Add the steamed potato slices and let cool.</p>
<p style="text-align: justify;">To make the pesto, combine the basil, zucchini, pine nuts, olive oil, water, salt and lemon juice in the bowl of a food processor. Process until rather creamy.</p>
<p style="text-align: justify;">Once the beans and potatoes are cold, add the rocket, the capers and the pesto and toss gently. Add some extra olive oil, if needed. Garnish with some basil leaves and pine nuts and serve.</p>

<p style="text-align: justify;">Cook the fava beans until very tender (use 2 parts water to 1 part beans). In a pot, sauté the shallot in the olive oil, then add it to the soup. Season with salt and process with a blender until smooth. Let cool at room temperature then refrigerate.</p>
<p style="text-align: justify;">Place the cherry tomatoes in a salad bowl, add the olive oil, salt and basil and toss. Refrigerate until serving time.</p>
<p style="text-align: justify;">When the soup is cold and ready to be served, divide it among individual bowls then top with some extra olive oil and the cherry tomato and basil relish.</p>

<p style="text-align: justify;">Cook the long grain rice in plenty of boiling, slightly salted water. Cook the black venere rice the same way in a separate pan. Make sure the rice is still al dente when you drain it. Rinse it under cold running water and transfer it into a salad bowl. Add the lemon juice and some sesame oil and refrigerate until it&#8217;s completely cold. To assemble your rice salad, take out the rice from the fridge and add all the vegetables, the ginger, some more sesame oil, the  salt, the nori flakes and toss. Top with the chives and serve cool.</p>

<p style="text-align: justify;">Place the flat beans in a large salad bowl (making sure they are cold), add the fava beans, tomatoes and capers and mix. Combine the chopped basil and the pine nuts in a mortar and pound with the pestle until blended. Add the olive oil a little at a time pounding with the pestle until you reach your preferred consistency (you can adjust the amount of oil). Add the salt, mix again and use the sauce as dressing for the salad.</p>

400-450 ml filtered water<br />
50 -60 ml oat milk (unflavoured and unsweetened)<br />
half a teaspoon vegetable bouillon powder<br />
freshly ground black pepper, just enough to taste<br />
chili powder, just enough to taste<br />
half a teaspoon powdered turmeric<br />
whole sea salt, just enough to taste<br />
1 teaspoon dried oregano<br />
1 teaspoon dried thyme</p>
<p>Makes 4 servings (12-15 balls) <span id="more-2566"></span></p>
<p style="text-align: justify;"><strong>Directions</strong></p>
<p style="text-align: justify;">Cook the beans in plain fresh water until tender (you can use a pressure cooker or large pot). Preheat oven to 170°  C. Drain, rinse under running water, drain again and transfer into a large bowl. Mash the borlotti with a potato masher. Add wheat gluten, flax seeds, nutritional yeast, oil, garlic, tamari, oat milk, salt, parsley, and mix well until everything is combined. Roll into balls (wet your hands now and then), line a baking tray with parchment-paper, and bake for 30-35 minutes. In the meantime, to make the vegetable stew, heat the olive oil in a large casserole over medium-high heat, add carrots and squash and sauté for 5-10 minutes, stirring often. Add water, oat milk, vegetable bouillon powder, black pepper, chili powder, turmeric, salt, oregano, thyme, and sauté for about 5 more minutes. Reduce the heat to low, cover and simmer for 30-35 minutes. Remove the lid and continue cooking until much of the liquid has evaporated, stirring occasionally. Turn off the heat.<br />
When the balls are ready, remove them from the oven and let cool a bit. Add them to the vegetable stew. Cook over low heat for another 15-20 minutes and serve.</p>

<p><strong>Directions </strong></p>
<p style="text-align: justify;">In a bowl, combine the tempeh cubes, shoyu, rice vinegar and garlic. Add some filtered water, just enough to cover the tempeh. Cover with a lid or kitchen foil or cling film and place in the fridge. Leave to marinate for 8-12 hours.</p>
<p style="text-align: justify;">When the tempeh is ready to be cooked, remove the cubes from the marinade (which can be used once more to marinate some extra tempeh). Heat a frying pan or wok over a high heat and add the olive oil, shoyu and water. Stir in the tempeh cubes and sauté for a couple of minutes or until the oil, shoyu and water have been absorbed. Add the raisins and the rosemary, toss and remove from the heat. Let cool slightly (I&#8217;d say 2-3 minutes). In the meantime, place the red cabbage strips in a salad bowl, add the olive oil, the apple vinegar and the salt and toss. Add the rosemary-raisin-tempeh cubes, toss again and serve.</p>

<p style="text-align: justify;">Cook the chickpeas in a pressure cooker or large pot until al dente. Rinse them under cold running water, put them in a salad bowl then let cool completely (first at room temperature, then in the fridge). In the meantime, prepare the vegetables. Once the chickpeas are chilled, add the tomatoes, the parsley, the onion, the lemon juice, the mint, the cumin and the chilli powder. Toss and sprinkle with the the olive oil and salt then toss again and serve immediately.</p>

Rinse the lentils under cold running water, put them in a salad bowl then let cool completely (first at room temperature, then in the fridge) before adding the cucumbers, pepper, parsley, onion and garlic. Toss and add the olive oil, vinegar, salt, pepper and chilli powder. Toss again then trasfer into the fridge to cool for at least half hour. Serve chilled.</p>

<p style="text-align: justify;">Cook the beans in boiling water for 6-8 minutes (don&#8217;t overcook them). Drain, rinse under running water, pat dry  if necessary with some kitchen paper, transfer into a salad bowl and let cool (first at room temperature, then in the fridge).</p>
<p style="text-align: justify;">To make the dressing, mince the garlic and the ginger. Wash and finely chop the parsley. Transfer garlic, ginger and parsley into a bowl, add the lime juice, olive oil and salt and mix well. Keep in the fridge until ready to use.</p>
<p style="text-align: justify;">Pour the dressing over the beans, add the poppy seeds, and mix it all together (I suggest using your fingers). Check whether the dressing needs some extra olive oil. Divide between serving plates and enjoy. This makes a great, light and flavourful side dish.</p>
